A Healthier Chocolate Chip Cookie

I found a recipe for chocolate chip cookies. I have had it a long time and never tried it. I think it's a recipe from my mom's collection of recipes. Before I moved out of my parents house I copied all the recipes I liked and some that I wanted to try. So I wanted to make some cookies but I like to make them healthier and change them up a bit. I really like this recipe because it's not a huge batch of cookies. You can make them often and have fresh cookies if you want.

So here is my new recipe after changing a few things up. I'll add my notes too. :) These were originally called Chocolate Chip and Peanut Cookies. I like oatmeal in my cookies instead. 

Oatmeal Chocolate Chip Cookies

Preheat oven to 375 degree F

1/2 cup butter
1/2 cup sugar ( I used rapadura sugar and then I ran out so I used a natural cane sugar for the rest)
1/4 cup brown sugar
1 egg
1 tsp vanilla
1 cup flour (I used my fresh ground whole wheat which is a light colored wheat)
1/2 cup oats (I used quick cook because that is what I had but I have used rolled and they were fine. I like oats in these cookies because it is yummy but I also like it because cookies with all butter spread. a lot. With the oats in there it doesn't spread)
1/2 tsp salt
1/2 tsp baking soda
1 6oz chocolate chips (mini or regular sized)

Cream butter and sugar, add egg and vanilla; and beat until fluffy. Mix together flour, oats, salt and baking soda. Stir into creamed mixture. Add chocolate chips by hand. Bake on a greased cookie sheet at 375 for about 10 mins. Remove from sheet immediately

I have also added a couple tablespoons ground flax seed to the mix. You do need to watch these closely, because an over done cookie is not yummy. Since they are brown already you want to be sure not to over bake. Enjoy! If you make these let me know how you like them :)
